Wagyu Summer Topside

Ingredients:

2KG Topside Joint

2 Courgettes

1 red pepper

1 yellow pepper

1 green pepper

2 Red onions

New potatoes

1 Aubergine

Wagyu Dripping

Moroccan-style spice

salt and pepper

Olive oil

Tender stem broccoli

Tomatoes

Chimichurri dressing

Red chilli peppers, shallots, garlic, parsley and a generous amount of vinegar and olive oil.

Method:

Preheat your fan oven to 200°C.

Season generously with a high-quality salt to enhance the natural flavours of the Wagyu.

Add crushed fresh garlic bulb, fresh parsley, sage and rosemary. Sprinkle garlic and herbs generously.

Place the Topside joint in the pre-heated oven and cook to your preference. For best results, we recommend cooking for approximately 1 hour for medium rare.

Prepare the Mediterranean-style vegetables and add a few dollops of our Wagyu dripping and a mixed Moroccan seasoning. Cook for approximately 45 minutes. 

For extra flavours, add some vine-ripened tomatoes and steamed tender steam broccoli.

Serve the Topside sliced on a bed of your roasted vegetables.

Finish with a chimichurri sauce, made simply with finely sliced red chilli pepper, shallots, garlic, parsley and a generous amount of vinegar and olive oil.
