'The Best Ever' Wagyu Roast Potatoes

Ingredients

  • Maris Piper potatoes
  • 1 tsp salt
  • Wagyu Beef Dripping
  • Crushed garlic
  • Fresh herbs (such as thyme and rosemary)
  • Rock salt

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and chop them into even chunks, roughly 4–6 per potato.
  3. Place in a pan with cold water and 1 teaspoon of salt.
  4. Bring to the boil, then reduce to a simmer.
  5. Cook until soft but not falling apart - your fork should slide in easily without breaking the potato.
  6. Drain and leave to steam dry for at least 10 minutes.
  7. Place a roasting tray in the oven with a generous helping of Wagyu Beef Dripping, crushed garlic, and fresh herbs like thyme and rosemary.
  8. Add the drained potatoes to a mixing bowl and toss with rock salt and a little extra Wagyu Beef Dripping.
  9. Transfer to the hot tray and roast for 20–30 minutes, shaking and turning throughout until golden and crisp.
