Ingredients
- Maris Piper potatoes
- 1 tsp salt
- Wagyu Beef Dripping
- Crushed garlic
- Fresh herbs (such as thyme and rosemary)
- Rock salt
Method
- Preheat the oven to 200°C.
- Peel the potatoes and chop them into even chunks, roughly 4–6 per potato.
- Place in a pan with cold water and 1 teaspoon of salt.
- Bring to the boil, then reduce to a simmer.
- Cook until soft but not falling apart - your fork should slide in easily without breaking the potato.
- Drain and leave to steam dry for at least 10 minutes.
- Place a roasting tray in the oven with a generous helping of Wagyu Beef Dripping, crushed garlic, and fresh herbs like thyme and rosemary.
- Add the drained potatoes to a mixing bowl and toss with rock salt and a little extra Wagyu Beef Dripping.
- Transfer to the hot tray and roast for 20–30 minutes, shaking and turning throughout until golden and crisp.
