Our Wagyu Bresaola is air-dried, salted beef that has been aged for around two months until it has dried and turns a dark red in colour. Cured and matured from silverside of Wagyu Beef it is lean and tender, with a sweet, musty smell, perfect for sharing. We prepare 143g of beef to make 100g of finished product. Moisture is lost in the maturation process.
